Hello lovelies, once again I am back with a super delicious pancakes recipe. I cannot begin to describe how awesome these pancakes were, I can feel the taste on my tongue as I type this out. It is vegan so if you have any animal protein allergies, you are good. But first, a little bit of some explaining. Let’s get right into it, shall we?
A lot of you have been asking me why I don’t post recipes anymore, here’s why. Just before our son clocked the six months mark, he developed a strange rash. I wasn’t too concerned since I knew he had sensitive skin and tried several home remedies which some worked and some didn’t. Then he turned six months, which meant he was gonna start eating food. The rash got worse as he continued growing. The doctor told me it could be something I’m eating, so she instructed me to keep checking what I eat and how his skin reacts. I did that but nothing seemed to change. I started cutting down on meat and animal protein stuff except fish and his skin really improved. I was certain that he was reacting to animal protein. Then, the doctor advised me to cut out animal protein completely. I wasn’t making any fancy meals anymore, just the good old trying to adjust my lifestyle.
Having no idea on where to start I went online to find ways of eating a balanced diet without meat in the picture. That’s how I came across Katrina Victoria, an amazing woman I love and adore so much. She has an adorable little boy, Apollo, who is a month older than my son. She is a mom who works out along with her supportive husband and they both are filipino and vegan. She has a well structured blog called Everysuperwoman, you should check her out. Basically, her lifestyle is decent and close to my own and I love everything about her. I remember one time I told her that, our lifestyles are almost the same but it was more like, she seems so happy and living perfectly, life goals right there. I’d tell you so much more about her but I choose not to. Just to be clear, I’m not exactly vegan but I avoid animal protein very often.
I have read most of, if not all of Kartina’s blog posts and watched her videos but the other day when she mentioned about this pancake recipe, I thought I could actually make them. I mentioned to her that I’d try them and she gave me a few tips on how to go about it (she is so cool, with 16k plus followers on instagram she still responds to my messages). So, I set out to do it and I did. I will not post the full recipe here but I’ll provide a link to her post so you could view it there. I’ll just talk about the ingredients and what I did that was different from her recipe.
The ingredients are perfect only that I had not taken time to find each of them so I used what I had.
I used brown sugar instead of turbinado sugar and it tastes as good. I used chia seeds instead of flax seed. I haven’t discovered vegan butter yet, I only had regular butter, so I used coconut oil instead. I used almond milk instead of soy milk. The rest of the ingredients were the same as hers.
For the toppings she used banana, strawberries, hazelnuts and melted dark chocolate. I used sliced white sweet potatoes, homemade tomato paste (recipe from the coast), home baked peanuts and chocolate syrup.
I’ve never eaten five pancakes at a go, the most I’ve done maybe three. These were by far the most delicious pancakes ever, what’s more, they are vegan. I love youuuu Katrina!!!. Thank You!
I wished that my husband was home to taste them, while still hot and fresh, he only got to see the pictures but I’ll make them for you when you are home my love.
